version of Martin Miller’s Gin that would give a more ‘old school’ authenticity to their classic repertoire of cocktails and help them create more complex, fully flavoured inventions.

THE WESTBOURNE DRY MARTINI
1. Fill up the shaker with ice
2. Add 60ml of Westbourne Gin and 15ml Dry Vermouth in the glass (Optional: dash of Orange Bitters)
3. Give it a stir to cool it
4. Strain to serve
5. Garnish with a lemon wedge
